The primary category is the one business type on a Google Business Profile that Google weighs most when deciding which searches the listing should appear for.
In practice
Pick the most specific category that matches the service that makes the most money: HVAC contractor rather than Contractor, Roofing contractor rather than Construction company. Add the rest as secondary categories.
Changing the primary category is the single biggest lever on a profile and the one most often set wrong.
